A few months back, I got a text from RJ that made me sad. It read "Bajio is closed down!!!" I didn't believe him so I called him and asked for all the details. Apparently, it was true, Bajio had shut it's doors. Now for those of you who don't know, Bajio is a great little restaurant off of I-17 and Happy Valley Rd. It's a lot like Cafe Rio (for those of you from UT.) It has THE BEST salads of any Mexican restaurant that I have ever been too. They are SO YUMMY!!! So when RJ told me closed down, I was really bummed. Really, really bummed!!!
Well aboout 2 months later, I got another text from RJ that said, "Bajio is re-opening next weekend." I was THRILLED!!! So of course, I made him take me there on its RE-Grand Opening weekend to get the yummy salad that I had been deprived of for the last 2 months.
Bajio, I don't know why you ever closed & I don't care. I'm just so glad that you are now open again for business. You are one of the many small things in life that make me happy.

I love Bajio! except for my breath afterwards, they have one in Cedar City where I'm from along with cafe rio and costa vida. I gain 20lbs everytime I go home.

MMM Bajio!!! They used to give us coupons when I worked in Glendale. I miss them!
